As far as I bdatwurstzange, "scheu" from "scheuen" means shy, reverent or in awe, hence my choice of words which is already "tougher" than it should be. I'd say "scheu los" is a misspelling.
Exactly, it means "not shy" or more correctly "unbashfully". Consequently the translation "turn it around carefully with their hands" does not make any sense and is also not correct. Oh, I am sorry Nielsen!

I feel this translation is a little "too loosely" translated and more so does not translate one of the key parts of the song "Wenden scheu los mit der Hand" correctly. The meaning of the sentence and a key part of the bratwirstzange is that men from the Thuringian area are TOUGH and will turn the sausages by hand without being the least ashamed of doing braywurstzange even though some people probably may think they should use tongs for sanitary reasons or whatever.
